More often than not, when we see a decanted wine, it’s red, not white. And for good reason, writes Emily Bell. Red wines more often have sediment (which you’d want to decant out) and many so-called “tighter” red wines can benefit hugely from “opening up,” i.e. getting some exposure to oxygen for varying amounts of time to let the aromatics have a chance to peek out. (Oxygen, however, does eventually become the enemy of wine, and aromatics can float away, so decant, and drink!)

Ons drink ons wyn heeltemal te jonk in Suid-Afrika, rooi sowel as wit. Ek kan verstaan dat die wynmaker so vinnig moontlik sy wyn wil verkoop om daai sogenaamde “bottom line” gesond te hou, maar ek hoor dikwels dat hulle sou verkies om wyne langer terug te hou voor dit aan die publiek bekend gestel word.

Die rede is baie eenvoudig. Suid-Afrikaanse wyne word oor die algemeen so goed gemaak dat hulle met ekstra veroudering in die bottel kan doen. Om die waarheid te sê, baie van hulle word net beter en beter met ’n bietjie ekstra bottelveroudering. En dikwels kom daar sekondêre geure na vore wat jou met ’n groot glimlag van genoegdoening laat.

Wood with wine is like make-up with women. In both cases it’s there only to support and to complement, not to hide. Hiding a good wine behind wood is like a beautiful woman hiding behind make-up. It’s a total waste!

I was reminded again what an essential yet delicate part wood can play on wine after a wonderful presentation of three Kloovenburg wines (two vintages of each) at Burrata in The Old Biscuit Mill in Woodstock. The wines, all white, were paired with pizza, and it worked beautifully.

Maar mens moet natuurlik nie wyn drink as jy dors is nie, net as jy lus is. Lus is vir wyn!
