Making that open bottle of wine last longer!

I get this question so often that I am sort of shocked that I haven’t addressed it yet, says Gregory Dal Piaz. It’s perhaps one of the best questions about wine, though its simple answer often gets obscured by marketing pitches designed to solve a problem that you probably don’t have.

Wine degrades, or oxidizes, due to the reaction between the delicate aromatic compounds in wine and oxygen. Heat speeds up these reactions. Excessive heat causes a whole slew of additional problems, but I’m making the assumption that you are careful enough not to cook your wine.

So how should you handle that bottle of wine you didn’t finish? Let’s explore your options.

You know what I miss? I miss cheesy commercials on wine on TV, says Gregory Dal Piaz from the USA. For whatever reason, the industry at large has pretty much relegated TV advertising to spirits and beer. What fun is that? We’ve been left with dogs and pirates to guide us through the confusing world of alcohol consumption. No wonder we’re drinking so poorly.

“Daar is drinkwyn en dan’s daar dinkwyn.” Ek kan nie meer onthou wie hierdie wysheid jare gelede kwyt geraak het nie, maar die persoon het by “drinkwyn” eenvoudige, onpretensieuse wyn bedoel wat mens se smaakkliere laat jubel, wat op jou tong dans soos ‘n wafferse ballerina, wat jou nie kan laat wag vir die volgende glas nie. Met ander woorde, pure pret in die mond.

Ek kan haute cuisine en bekroonde wyn net so geniet soos enige ander mens (met goeie smaak!), en daar is beslis ’n tyd en plek daarvoor, maar gee vir my enige tyd van die dag ’n eenvoudige maaltyd wat met die varsste bestanddele en met sorg voorberei is, en ek gee vir jou ’n feesmaal soos min! En as daai maaltyd ook nog tapas-styl is – ’n hele spul eetgoed in klein hoeveelhede – dan’s ek in die sewende hemel.

Organic wine: Are we just fooling ourselves?

I reached out to some wine professionals to get their opinions about organic/natural/biodynamic wines, but before I turn the stage over to them, I’d like to explore the situation briefly, writes Gregory Dal Piaz from America.

Before we consider the value of these wines, let’s be as clear as possible in regards to the definitions, which can be vague. To begin with, there is no organic wine, just wine made from organic grapes. Organic is a way of growing crops. The techniques used in the cellar, and additional treatments in the vineyard are what distinguishes, to a great extent, the wines peddled under the moniker “natural” or “biodynamic”.

Chenin blanc may be best known in it’s home, France’s Loire Valley, but it is also an exceptionally important variety in South Africa. Perhaps the most important white variety as South Africa continues to re-establish it’s markets around the world.

Last year I was fortunate and privileged to attend the Chenin Blanc Summer Showcase. This year it was the Chenin Blanc Winter Showcase I was invited to. I am beholden to the Chenin Blanc Association for this privilege. Well, for both!

We started the day at the spectacular Dellaire Graff estate outside Stellenbosch with a Cap Classique made from chenin blanc, my very first experience of a chenin bubbly. (PS. If anybody knows where I can buy some, please let me know! It’s bloody nice!)

Kroasië het eens op ’n tyd verskeie inheemse kultivars gehad wat verwant is aan zinfandel, wat in die 19de eeu die basis van die land se wynbedryf gevorm het. Hierdie diversiteit dui daarop dat dié wyndruif langer in Kroasië bestaan as op enige ander plek en dat hierdie Mediterreense land heelwaarskynlik dié kultivar se land van oorsprong is.

Die Ormonde-privaatkelder by Darling is die storie van die Bassons wie se wortels veel dieper in die grond van hierdie geweste lê as enige wingerdstok s’n. Theo Basson, die huidige grootbaas, is die derde geslag wat hier naby aan die Atlantiese Oseaan boer nadat sy oupa, Vernon, naby Philadelphia, nie ver van Darling af nie, geboer het en sy pa, Nico, in 1970 die plaas by Darling aangeskaf en ’n suilwelboerdery op die been gebring het.

Drie wynreekse word in die moderne kelder gemaak, naamlik Alexanderfontein, Ormonde en Ondine, maar vandag wil ek konsentreer op die sauvignon blanc wat onder die Ormonde-etiket bemark word.

Raats Family Wines in the Polkadraai Hills between Stellenbosch and Kuils River pride themselves on the fact that they specialise in the crafting of exceptional wines from chenin blanc and cabernet franc grapes, and the 2011 OLD VINE Chenin Blanc I had yesterday with a seafood chowder and sweet potatoe bread (from the new Lanzerac Deli) is ample proof of their success.
